Guiltless Chicken Soup

We, Filipinos enjoy any kind of soup whether under hot or cold conditions. In our family, we cook chicken soup for our breakfast, 3 or 4 times a week. It is our family's staple food. I make sure our family eats heavy breakfast, so everytime I would cook chicken sopas for breakfast, I loaded it up with vegetables to help them be fueled with the right vitamins and minerals they need throughout the day.

Preparing for chicken stock can be a bit tiring and time consuming, so instead of using chicken I used Sexy Chix chicken chunks in guiltless broth. It has the same taste and tenderness as that of cooked chicken but it has less fat.

So here are the ingredients of my guiltless chicken soup:

1 can Sexy Chix in guiltless broth
1 cup elbow macaroni
1 large carrot
1 head broccolli
1 bell pepper
Wandah all-around creamy mix
1 pc chicken broth cube
3 cups water
salt & pepper to taste








Here's how:

1. In a medium-sized casserole, boil water. 
2. While waiting for water to boil, slice the vegetable into bite sizes.
3. When the water is already boiling, add in chicken broth, elbow macaroni & Sexy Chix (including the broth) and parsley. 
4. After 5 minutes, add carrots, bell pepper, pepper and salt, to taste. Simmer for 3 minutes.
5. Add brocolli then simmer again for 5 minutes. 
6. Add Wandah mix and stir until creamy, simmer for 5 minutes more.


Why Sexy Chix instead of chicken? I want to save time cooking. Sexy Chix is tender and tasty plus it is healthy as it is fat-free, MSG-fee and has less sodium content. I also loved using Wandah instead of the usual evaporated milk because I can achieve the right creaminess for my soup. Unlike milk it does not create lumps when left boiling for 5 minutes or more. This dish is really Masarap, Masustansya at Kayang-kaya!

Chicken Arrabiata Pizza

Thinking of a new dish to serve my family for snacks has always been a struggle for me because as a stay-at-home-Mom (SAHM), I would always want to give the best for the whole family. For me snacking is also an important meal of the day as it fuels us up after the tiring routines from morning till noon. So whenever I would prepare something for snacks, I would always think of something "Masarap, Masustansya at Kayang-kaya."

Everybody loves pizza, kids and even kids-at-heart enjoy it, but I don't think the usual pizza toppings like hotdogs, sausages and ham, are nutritious enough. So I looked up for something delicious and nutritious in the pantry, that I can incorporate to my new pizza recipe. This Sexy Chix in Arrabiata sauce caught my attention. Arrabiata in Italian is a spicy sauce for pasta made from garlic, tomatoes and red chili peppers cooked in olive oil. Perfetto! This Sexy Chix in Arrabiata sauce is indeed perfect for my pizza!

Let's start preparing the ingredients for my Chicken Arrabiata pizza:



 

1 can Sexy Chix shredded chicken Arrabiata
4 pcs small pizza crust
1/2 cup tomato paste
2 large red tomatoes
2 large bell peppers, 1 green and 1 red
1 large white onion
1 small can mushrooms
1 small can pineapple tidbits
1 box Magnolia Cheezee

Optional:
              dried oregano - if you want to add more Italian taste to the pizza

Here's how:

1. Slice tomatoes, bell peppers and onions as desired. Set aside.


2. In a pizza crust, spread 1 tablespoon tomato paste and 2 tablespoons Sexy Chix ( you may add more tomato paste & Sexy Chix if you want), top with tomatoes, bell peppers, onions, mushrooms, pineapple, dried oregano (optional) and grated Cheezee. Why I used Magnolia Cheezee instead of easy-to-melt cheese? It's a lot cheaper but it melts nicely.

3. Pre-heat oven to 210 degrees Celsius. Bake pizza for 10 minutes. If you have bigger oven, cook them simultaneously, to save time and effort.


4. Serve while hot. 



 

This dish is very easy to prepare and cook. In just 30 mins, you already have a delicious and nutritious snacks for the whole family. I spent P200.00 for all the ingredients, but I didn't used up everything. Only 1/3 of the cheese was used; 1/2 can of mushroom and 1 cup of tomato paste, were left. 

Pizza is very enjoyable to cook. It is effortless, you don't have to have the right amount of ingredients to make a delicious one. You can always DIY a pizza, personalize it according to your preferences.

We've had 16 slices of pizzas, good for 5 to 7 persons. Approximately you'll spend P25.00 for each person.
And guess, who is the most excited to try my new dish? It's my loving Bunso...

Mushroom - low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Dietary Fiber, Protein, Vitamin C, Folate, Iron, Zinc and Manganese, and a very good source of Vitamin D, Thiamin, Riboflavin, Niacin, Vitamin B6, Pantothenic Acid, Phosphorus, Potassium, Copper and Selenium.

Bell Pepper - low in Saturated Fat, and very low in Cholesterol and Sodium. It is also a good source of Thiamin, Niacin, Folate, Magnesium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Potassium and Manganese.

Pineapple - very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Thiamin, Vitamin B6 and Copper, and a very good source of Vitamin C and Manganese.

Tomatoes - low in Sodium, and very low in Saturated Fat and Cholesterol. It is also a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Magnesium, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Potassium and Manganese.

Onion - very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Vitamin B6, Folate, Potassium and Manganese, and a very good source of Vitamin C.

Oregano - very low in Cholesterol and Sodium. It is also a good source of Vitamin B6, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Folate, Calcium, Iron, Magnesium and Manganese.

Abby Asistio : Meeting Mark Zuckerberg and My Facebook Friends Day Experience

Last January 31, 2016, Fellow Filipino Abby Asistio flew to San Francisco and had the wonderful opportunity of being chosen as one of the eighteen invited by Facebook on their 12th Anniversary Friends Day celebration with California-based Alopecia awareness advocate, Rachel Regal.  Alopecia is an autoimmune condition which results in partial or total head and body hair loss.  Abby Asistiohave had it since she was four while Rachel just developed it sometime in 2012, the same year she discovered that her 10-year-old daughter, Eliana, had it, too.  Six inspiring stories were picked by Facebook among its 1.64 billion users and Abby’s friends were all amazed when theye’ve found out that Abby’s Alopecia story was one of them.  Imagine that!




Abby and Rachel met each other through the double A hand sign campaign that Aby started in 2012, and They've been "connected" since then.  Last year, Facebook Stories featured how these two were able to build a friendship, as well as campaign for disease awareness through Facebook!  And last February 1st, Abby and Rachel had the chance to tour FB headquarters in Menlo Park, San Francisco, meet and chat with the people behind Facebook (Founder & CEO Mark Zuckerberg, COO Sheryl Sandberg, CPO Chris Cox, and a whole lot of awesome people), get crazy cool gadgets and have one of the best experiences of their lives.


Abby recounted that it was such a surreal feeling to be in the same room as the creator of Facebook, Mark Zuckerberg. Mark Z was wearing his trademark look (jeans, sneakers, shirt and a big smile on his face), and had such a friendly, approachable aura and demeanor about him.  Not at all intimidating!  He shared stories about how the company started, its mission-vision, the ups and downs that come along, and their future plans.  Those invited also had the chance to ask him questions. When Mark Z was asked about achieving success and life’s “impossibilities”.  He said, “There’s a difference between impossible and things taking a really long time. Even if you’re not going to be able to do something in a short time period, if you care about something,you want to see the world to move into that direction… So the best thing to do is just get started and not be discouraged.  It’s tough because this stuff is hard, or else people would’ve already done it.”

 
Abby Asistio got the chance to ask a question to one of the world’s 50 most powerful, successful women in business, Facebook COO Sheryl Sandberg.  Aside from Alopecia awareness, Abby is also an active Real Beauty advocate with girls and women struggling with various insecurities, being so consumed by the world’s unrealistic and sometimes superficial standards of beauty. So Abby asked Sheryl about her perception of it. Sheryl said that beauty is just like success and that no one could really define it for you.  We are all unique.  We have different stories, dreams and desires. We should explore our own inner and outer beauty, believe and embrace that we are beautiful, and never allow anyone to tell us otherwise.


Mark capped off his talk by sharing their company philosophy with everyone present. Though already having over 1 billion subscribers, there are still 7 billion people all over the world without access to all the meaningful connections and information that Facebook brings. One thing that the company stands by is that “things are always 1% completed”. It keeps them grounded, reminding them that there is always so much work, growth and progress to be done, and so many people to reach out to and help.
Everything about the Facebook trip was overwhelming and inspiring according to Abby.  More than anything, it reminded her about “responsibility”.  We are all given our own platforms, in this case “accounts and connections”, to make a dent in this world. It is up to us to become complacent and take these vehicles for granted, or maximize the opportunities and use them to make a positive impact in this generation. Abby is grateful that Facebook has become a medium for her to communicate disease awareness and touch people beyond the confines of her tiny room and her country. Abby is also glad that she and Rachel are two out of millions of people choosing to recognize the importance of social media in contributing to making this world a better place, and actually doing something about it.

Truly, God plans the best adventures and creates the most beautiful surprises.  Abby knows that she wouldn't have been handpicked for this if it weren't for Him, as well as the countless individuals who have cared and showed support for my advocacy.Abby would like to leave a positive thought to everyone that we should really take the time to search for and identify our “purpose” – that one unique, very specific calling that is the result of our talents, dreams, desires, passions and experiences.  Once you find it, be faithful to it no matter how long or difficult the journey towards its fulfillment may be. You’ll never know where it could lead to, how far it could go and how large it could grow. #Homecoming that touches the heart

When we heard of someone special coming home, we get too excited. Too excited that we wanted to do the best welcome party or homecoming celebration for them. We even tend to renovate the house, buy new furnishings; we make sure the whole place where they are going to stay will be at its best and that will make them most comfortable with. We prepare and cook their favorite food and drinks for their #homecoming . We make it at a point where everything would seem like a fiesta when they arrive.


That's the best trait of us, Filipinos - we are number one when it comes to hospitality and we would always want something grand for our loved ones who's coming back home.

ASIM-LINAMLINAM PORK SINIGANG


Ingredients:

2 pieces AJI-SINIGANG® Cube
½ kilo Pork liempo, Sinigang cut
90 grams Tomato, quartered
30 grams Onion, quartered
1 ½ liter Water
90 grams Gabi
80 grams Labanos, sliced diagonally
45 grams String beans, cut into 1 ½”
90 grams Kangkong
1 piece Green chili

Here's how:

1. BOIL pork in water for 40-50 minutes until tender.

2. SIMMER. Add gabi and simmer for 6 minutes.

3. SEASON AND SIMMER. Add AJI-SINIGANG® Cubes and other vegetables. Simmer for 5 minutes until cooked. Makes 4-6 servings.

Be part of the 3rd Summer Reading Camp!


Reading is fundamental to the development of our children. It exercises the human brain - it strengthens connections and builds new connections. It also improves concentration, develops child's imagination and helps develop empathy. Get ready to see Filipino stories come alive and take home a part of them with you thru art as the doors for the 3rd Summer Reading Camp opens this April 17, Sunday, from 10am to 4pm!



It will be a whole day of reading, storytelling and art activities for kids aged 3-12!


There will be teepees setup "camping in the city style" and three corners for them to explore namely:

READING CORNER – where they can borrow and read all the books they want from our Book Mobile Phils mobile library on site.

ART CORNER – where they can unleash their inner artist by engaging in art activities related to stories read to them

STORYTELLING CORNER – where thay will listen and watch as children’s stories come alive via The Storytelling Project team and Ms. Isa Mijares.

ADVOCACY CORNER - where our partner NGO Black Pencil Project will be hosting a Paint-a-Pencil activity where blank pencils will be designed by kids and parents, and will be donated to BPP's partner schools nationwide.

Aside from participating in these events, Adarna House will also be selling books on site at affordable rates.

Women have now more freedom than before especially in democratic countries like ours. But while we enjoy our freedom, are we also sure that we are safe to roam around the place we live in?

According to a new research, three out of five women have experienced a form of sexual harassment while commuting in Metro Manila. It was conducted by “Baseline Study on How safe are women in our city streets” commissioned by Quezon City local government and United Nations Entity for Gender Equality and Women’s Empowerment (UN Women).

To shed “light” on the issue the LGU and UN Women held back-to-back events: (1) A press conference at the QCX Museum, which saw the launch of the research, also revealed Glaiza de Castro as the new celebrity supporter of UN Women Safe Cities; and (2) A grand assembly of 1000 supporters who released sky lanterns to light up the Quezon City skyline and called for safe cities where women are free from fear and free from all forms of street harassment and sexual violence. Both events were to commemorate International Women’s Day (#IWD2016) as well as to kick-off the celebrations in March as the National Women’s Month.


Whether due to shame or fear, women traditionally ignore and keep silent about catcalls, wolf-whistling, stalking, repeated harassment for their numbers, male public exposure, rubbing or groping (panghihipo) inside the MRT/ jeepneys, even bearing indecent language being yelled at them by men as they walk by.Women experience all these forms of sexual harassment as they move about in the city, using public transport, terminals, markets/malls, and even just walking home in their own neighborhoods. During the press conference discussing the problem of the frequent street harassment of women, De Castro observed, "We know about it, we are offended by it, but we don't know how to prevent it."The research reported that eighty-eight percent (88%)of women aged 18-24 years, have experienced some form of sexual harassment in their lives, but more than half do not report or do anything about it.


This is why the LGU partnered with UN Women to implement the Safe Cities and Safe Public Spaces Global Initiative. QC is the first city in Metro Manila to be one of over 24 cities around the world in the programme to stop street harassment and sexual violence against women and girls (SVAWG) in public spaces with funding from Spanish Agency for International Cooperation and Development (AECID).

The evening’s grand assembly was a visual spectacle where supporters of women’s right to safety in the city banded together to celebrate the spirit of community fighting to stop street harassment of women. Hosted by PTV4’s Good Morning Boss talents, Jules Guiang and Karla Paderna, the event was graced by musical performances from Cooky Chua and Bayang Barrios.


Guiang expressed, “This is such an important issue and we are grateful that for the first time we have a programme on women’s safety in public spaces and educating everyone that sexual harassment of women in any form is not acceptable.”

The Quezon City Local Government just passed amendments to the Gender and Development Code increasing penalties for sexual harassment and sexual violence against women in public spaces to a range of one to five thousand pesos (Php1,000 to Php5,000) for the varying severity of offenses.
